In a saucepan over high heat, combine water, butter, salt, and sugar. Bring to a boil, then reduce the heat to low.

Gradually add the flour, stirring continuously until the dough forms and pulls away from the sides of the pan. Remove from heat.

Transfer the dough to a mixing bowl and let it cool for 4-5 minutes. Once slightly cooled, add the egg and vanilla extract. Use an electric hand mixer to blend until smooth.

Transfer the dough into a piping bag fitted with a star tip. Preheat the air fryer to 375°F and lightly spray the basket with nonstick cooking spray.

Pipe small bite-sized churros into the air fryer basket, leaving space between them. Brush the tops with melted butter and air fry for 10-12 minutes, or until golden brown.

In a shallow bowl, mix sugar and cinnamon. Toss the warm churro bites in the mixture until fully coated. If needed, brush with melted butter before rolling in the sugar mixture.
