Decadent Cinnamon Apple Dessert (Print Version)

# Ingredients:

01 - All-purpose flour (1/2 cup)

→ Apple Topping

06 - Granny Smith apples (2, peeled and thinly sliced)
07 - Light brown sugar (3 tablespoons)
08 - Ground cinnamon (1/2 teaspoon)

→ Graham Cracker Crust

09 - Graham cracker crumbs (1 1/2 cups)
10 - Sugar (2 tablespoons)
11 - Unsalted butter (6 tablespoons, melted)
12 - Ground cinnamon (1/2 teaspoon)
13 - Ground nutmeg (1/2 teaspoon)
14 - Salt (pinch)

→ Cheesecake Filling

15 - Full-fat cream cheese (32 ounces, room temperature)
16 - Sugar (1/2 cup)
17 - Light brown sugar (1/2 cup)
18 - Sour cream (2/3 cup, room temperature)
19 - Ground cinnamon (1 teaspoon)
20 - Vanilla extract (1 teaspoon)
21 - Large eggs (4, room temperature)

# Instructions:

01 - Whisk together streusel ingredients and refrigerate. Ensure mixture forms clumps with no dry spots.
02 - Toss thinly sliced apples with brown sugar and cinnamon. Refrigerate.
03 - Preheat oven to 350°F. Spray a 9-inch springform pan with cooking spray and line bottom with parchment paper.
04 - Whisk graham cracker crumbs, nutmeg, cinnamon, sugar, and salt. Add melted butter and mix until all crumbs are moist.
05 - Press crust into bottom and slightly up sides of pan. Bake for 9-10 minutes until golden brown. Cool and reduce oven temperature to 325°F.
06 - Beat cream cheese with sugars on lowest speed. Add sour cream, vanilla, and cinnamon on medium speed.
07 - Add eggs one at a time on low speed, scraping sides of bowl after each addition. Stop mixing as soon as final egg is combined.
08 - Pour batter into cooled crust. Tap to remove air bubbles. Arrange apple slices on top of batter, covering completely.
09 - Prepare water bath by placing boiling water in a roasting pan at bottom of oven. Place cheesecake on middle rack. Bake 1 hour 10-15 minutes.
10 - Turn off oven, crack door open for 1 hour. Remove and let cool to room temperature. Run spatula around edges. Refrigerate overnight.
11 - Remove from pan and serve chilled. Optional: Top with salted caramel sauce or ice cream.
