Bacon Cheeseburger Meatloaf (Print Version)

# Ingredients:

→ Meatloaf

01 - 1/2 cup dill pickle relish (drained) or finely processed pickles
02 - 2 pounds lean ground beef
03 - 1/4 cup crispy fried onions (or 2 tbsp onion flakes or 1 tsp onion powder)
04 - 2 large eggs
05 - 1 cup panko bread crumbs
06 - 1 tablespoon Worcestershire sauce
07 - 1 teaspoon liquid smoke flavor
08 - 8 ounces sharp cheddar cheese, diced
09 - 6 slices bacon, chopped
10 - 10 slices bacon, whole (for topping)

→ Glaze

11 - 1/2 cup ketchup
12 - 1 tablespoon maple syrup or brown sugar
13 - 1 teaspoon sriracha (optional)

# Instructions:

01 - Set the oven to 350°F (175°C) and allow it to fully preheat.
02 - In a large bowl, combine the drained pickle relish, ground beef, fried onions, eggs, panko, Worcestershire sauce, and smoke flavor. Mix gently until combined.
03 - Snip 6 bacon slices into pieces and fold them into the meat mixture along with the diced cheddar.
04 - Form the mixture into a loaf and place it in a 9x13 baking dish or on a lined baking sheet. Lay the remaining whole bacon strips over the top.
05 - Bake for 50–60 minutes or until the internal temperature reaches 160°F using a meat thermometer.
06 - Mix ketchup with maple syrup and sriracha (if using).
07 - Brush the glaze over the baked meatloaf and return to the oven for another 5–10 minutes to set the glaze.

# Notes:

01 - Use brown sugar as a swap for maple syrup if preferred.
02 - Let the meatloaf rest for a few minutes before slicing to hold its shape better.
