Cheesy Beef Lombardi Casserole (Print Version)

# Ingredients:

→ Meat & Tomatoes

01 - 1 pound lean ground beef (or ground turkey/chicken)
02 - 1 (14.5 oz) can diced tomatoes
03 - 1 (10 oz) can diced tomatoes and green chiles (Rotel)
04 - 1 (6 oz) can tomato paste

→ Seasonings

05 - 1 teaspoon garlic powder
06 - 1 teaspoon onion powder
07 - 1 teaspoon salt
08 - ½ teaspoon black pepper

→ Pasta & Dairy

09 - 12 oz package egg noodles
10 - 1 cup sour cream (or plain Greek yogurt)
11 - 2 cups shredded cheddar cheese
12 - 1 cup grated parmesan cheese
13 - 1 cup shredded mozzarella cheese

# Instructions:

01 - Preheat oven to 350°F. Grease a 9x13 baking dish and set aside.
02 - Brown ground beef in skillet over medium-high heat until crumbly. Drain excess fat.
03 - Add diced tomatoes, tomatoes with chiles, tomato paste, and seasonings. Simmer 15-20 minutes, stirring occasionally.
04 - Cook egg noodles according to package until al dente. Drain and toss with sour cream until fully coated.
05 - Spread creamy noodles in baking dish. Top with beef sauce, then sprinkle cheeses evenly over top.
06 - Bake 20-25 minutes until hot and bubbly with lightly browned cheese. Let stand 5 minutes before serving.

01 - Add pasta water for extra creamy noodles
02 - Can simmer sauce longer for deeper flavor
03 - Cover with foil if cheese browns too quickly
