# Ingredients:

10 - Boneless, skinless chicken breasts (1 1/2 pounds, about 3 medium, pounded to even thickness)
11 - Kosher salt (1 teaspoon)
12 - Black pepper (1/2 teaspoon)
13 - Paprika (1/2 teaspoon)
14 - Extra virgin olive oil (2 tablespoons)

→ Garnish

15 - Fresh blackberries (1 1/2 cups, divided)
16 - Fresh thyme (for garnish)

# Instructions:

01 - In a medium bowl, whisk together blackberry preserves, water, bourbon, balsamic vinegar, olive oil, Dijon mustard, garlic, salt, and pepper until fully combined. Set aside.
02 - Pat chicken breasts dry with paper towels. In a small bowl, mix salt, pepper, and paprika. Season both sides of the chicken breasts with the seasoning mixture.
03 - Heat olive oil in a large nonstick skillet over medium heat. Add chicken breasts and cook for 6-7 minutes on the first side. Flip and cook another 6-7 minutes, or until internal temperature reaches 165°F. Remove chicken and transfer to a plate. Tent loosely with aluminum foil to keep warm.
04 - In the same skillet, add 1 cup of fresh blackberries. Cook over medium heat for 2-3 minutes, stirring gently, until blackberries soften and release their juices.
05 - Pour prepared blackberry glaze into the skillet with the blackberries. Stir gently to coat the berries. Let the glaze simmer for 1-2 minutes to warm up.
06 - Return chicken breasts to the skillet. Spoon blackberry glaze over the chicken, letting it simmer for 1-2 minutes to warm the chicken and coat with sauce.
07 - Plate the chicken, spoon additional blackberry glaze over the top. Garnish with reserved fresh blackberries and fresh thyme.
