Buffalo Chicken Egg Rolls (Print Version)

# Ingredients:

→ Filling

01 - 2 cups (280g) rotisserie chicken, finely diced
02 - 4 ounces cream cheese, softened
03 - ¼ cup buffalo sauce, plus extra for serving
04 - 1 cup (113g) sharp cheddar cheese, shredded
05 - 1 cup (113g) mozzarella cheese, shredded
06 - 1 packet (1 ounce/2 tablespoons) dry ranch seasoning mix

→ Assembly

07 - 8 egg roll wrappers
08 - Water, for assembly

→ For Serving

09 - Ranch dressing or blue cheese dressing
10 - Additional buffalo sauce

# Instructions:

01 - Combine chicken, cream cheese, buffalo sauce, cheddar cheese, mozzarella cheese, and ranch seasoning in a large bowl until well mixed.
02 - Place ⅓ cup filling in center of each wrapper. Wet edges with water, fold bottom corner over filling, fold in sides, and roll tightly to seal.
03 - Set air fryer to 400°F. Spray egg rolls with cooking spray, air fry 3-4 minutes per side until golden brown.
04 - Serve hot with ranch or blue cheese dressing and extra buffalo sauce if desired.

# Notes:

01 - Can be fried in oil at 365°F for 3 minutes until golden brown
02 - Can be baked at 400°F for 15-20 minutes
03 - May need to cook in batches depending on air fryer size
