Spinach Cheese Stuffed Pastries (Print Version)

# Ingredients:

→ Main

01 - 300g fresh spinach (or 200g frozen)
02 - 200g ricotta cheese
03 - 100g grated mozzarella or feta cheese
04 - 500g puff pastry

→ Aromatics & Binding

05 - 1 medium onion
06 - 2 cloves garlic
07 - 1 large egg
08 - Olive oil, salt, and pepper to taste

# Instructions:

01 - Sauté chopped onion in olive oil until translucent. Add minced garlic.
02 - Add spinach and cook until wilted or heated through. Let cool.
03 - Mix cooled spinach with cheeses, beaten egg, salt, and pepper.
04 - Cut puff pastry into circles, fill with mixture. Seal edges with fork.
05 - Brush with egg wash, bake at 200°C (400°F) for 25 minutes until golden.

01 - Fresh spinach gives better texture
02 - Can use different cheese varieties
03 - Great with dipping sauces
