In a standing mixer bowl, combine warm water and sugar. Sprinkle yeast on top and let sit for 10 minutes until the mixture begins to foam and grow.

Add melted butter and stir to combine. Mix flour and salt together, then add to the liquid. Use dough hook to mix on low speed until ingredients are combined.

Increase mixer speed to medium and knead until the dough is smooth and pulls away from the sides of the bowl, about 4-5 minutes.

Remove dough from mixer and place in a clean, oiled bowl. Cover with a kitchen towel and let rise in a warm spot until doubled in size, about 1 hour.

Preheat oven to 450°F. Line two baking sheets with parchment paper and drizzle with oil. Fill a large pot with water and baking soda, bring to a rolling boil.

Divide dough into 8 equal pieces. Roll each piece into a 24-inch rope, flatten, and place cheese sticks down the center. Pinch sides to close.

Shape each rope into a U, cross ends, bring down, twist, and press onto the bottom of the U to form a pretzel shape.

Drop pretzels into boiling water, 1-2 at a time, for about 30 seconds. Constantly spoon hot water over the dough. Remove with a large, flat spatula.

Brush pretzels with egg wash and sprinkle with coarse salt. Bake until dark golden brown, about 12 minutes.

Transfer to a cooling rack and let rest for at least 5 minutes before serving.
