Cheesy Homemade Pretzel Delight (Print Version)

# Ingredients:

→ Pretzel Dough

01 - Warm water (1 1/2 cups)
02 - Sugar (1 tablespoon)
03 - Instant yeast (2 1/2 teaspoons)
04 - Unsalted butter, melted (3 1/2 tablespoons)
05 - All-purpose flour (4 1/2 cups)
06 - Kosher salt (2 teaspoons)

→ Filling

07 - Sharp cheddar cheese (1 cup, cut into 1/4-1/2 inch wide, 2-inch long sticks)

→ Boiling Solution

08 - Water (1 pot)
09 - Baking soda (2/3 cup)

→ Topping

10 - Egg yolk (1)
11 - Water (1 tablespoon, for egg wash)
12 - Coarse salt (for sprinkling)

# Instructions:

01 - In a standing mixer bowl, combine warm water and sugar. Sprinkle yeast on top and let sit for 10 minutes until the mixture begins to foam and grow.
02 - Add melted butter and stir to combine. Mix flour and salt together, then add to the liquid. Use dough hook to mix on low speed until ingredients are combined.
03 - Increase mixer speed to medium and knead until the dough is smooth and pulls away from the sides of the bowl, about 4-5 minutes.
04 - Remove dough from mixer and place in a clean, oiled bowl. Cover with a kitchen towel and let rise in a warm spot until doubled in size, about 1 hour.
05 - Preheat oven to 450°F. Line two baking sheets with parchment paper and drizzle with oil. Fill a large pot with water and baking soda, bring to a rolling boil.
06 - Divide dough into 8 equal pieces. Roll each piece into a 24-inch rope, flatten, and place cheese sticks down the center. Pinch sides to close.
07 - Shape each rope into a U, cross ends, bring down, twist, and press onto the bottom of the U to form a pretzel shape.
08 - Drop pretzels into boiling water, 1-2 at a time, for about 30 seconds. Constantly spoon hot water over the dough. Remove with a large, flat spatula.
09 - Brush pretzels with egg wash and sprinkle with coarse salt. Bake until dark golden brown, about 12 minutes.
10 - Transfer to a cooling rack and let rest for at least 5 minutes before serving.
