Cheesy Taco Pinwheels (Print Version)

# Ingredients:

→ Filling

01 - 1/2 pound ground beef
02 - 2 tablespoons taco seasoning
03 - 3 ounces cream cheese, room temperature
04 - 1 tablespoon sour cream
05 - Salt, to taste

→ Assembly

06 - 2 large flour tortillas
07 - 1/4 cup shredded cheddar cheese

# Instructions:

01 - In a small skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Drain any excess grease.
02 - Add taco seasoning and 1/4 cup of water to the skillet. Stir well and cook for 5-10 minutes, until the liquid evaporates.
03 - In a mixing bowl, combine the seasoned beef, cream cheese, and sour cream. Mash together with a fork until smooth. Season with salt if needed.
04 - Spread the beef mixture evenly over both tortillas, reaching the edges. Sprinkle shredded cheddar cheese evenly over the filling.
05 - Roll each tortilla tightly. Trim the ends, then slice each roll into 5 even pieces.
06 - Arrange the pinwheels in a single layer in an air fryer basket. Cook at 370°F (190°C) for 5 minutes, or until crispy and golden.
07 - Serve warm with salsa or guacamole for dipping.

# Notes:

01 - Use low-carb tortillas to make this recipe keto-friendly.
02 - Leftover taco meat works well in this recipe—just use about 1 cup of cooked beef.
03 - For extra crunch, lightly brush the pinwheels with oil before air frying.
