01 - 1½ pounds boneless, skinless chicken breasts
02 - 2 tablespoons fajita seasoning
03 - 1 tablespoon vegetable oil
04 - 2 medium bell peppers, sliced into strips
05 - 1 medium yellow onion, thinly sliced
06 - 1½ cups shredded cheese (any meltable kind works well)
07 - Fresh chopped cilantro, for garnish

# Instructions:

01 - Set your oven to 400°F (200°C) and let it preheat while you prep the ingredients.
02 - Place the chicken breasts in a baking dish. Drizzle with oil and sprinkle fajita seasoning evenly over both sides. Use your hands to coat the chicken well.
03 - Scatter the sliced bell peppers and onion over the chicken. Add a little more seasoning if desired, then top everything with shredded cheese.
04 - Bake the dish uncovered in the preheated oven for 25–30 minutes, or until the chicken is fully cooked through and reaches 165°F (74°C) internally.
05 - Remove from the oven, sprinkle with fresh chopped cilantro, and serve hot.

01 - To reduce cooking time, you can cube the chicken into smaller chunks before baking.
02 - This dish pairs well with plain or garlic butter pasta, rice, or cauliflower rice for a low-carb meal.
03 - Leftovers can be stored in the fridge and reheated in the oven or microwave.
04 - For a lighter version, skip the cheese and top with a sprinkle of Parmesan mixed with panko, then spray with oil and bake.
