Spread 1 tablespoon of butter thinly on one side of each sourdough bread slice. Set aside the remaining 1 tablespoon of butter in a heavy-bottom skillet.

In a small bowl, mix mayonnaise and chipotle adobo sauce. Spread the chipotle mayo evenly on the unbuttered sides of the bread.

On one bread slice, sprinkle shredded Colby jack cheese evenly. Top with thinly sliced avocado.

In a small bowl, mix shredded chicken with BBQ sauce until well combined. Spread the chicken mixture on the other bread slice.

Heat the skillet on medium heat until butter is melted. Add the sandwich and cook for 3-4 minutes on each side until golden brown.

Add 1 tbsp of water to the bottom of the pan and cover with a lid. The steam will help melt the cheese. Remove from pan and serve with a pickle or tomato soup.
