Spicy Chicken Avocado Sandwich (Print Version)

# Ingredients:

→ Sandwich Components

01 - Sourdough bread (2 slices)
02 - Butter (2 tbsp, softened)
03 - Mayonnaise (2 tbsp)
04 - Chipotle adobo sauce (3 tsp)
05 - Colby jack cheese (1/2 cup, shredded)

→ Filling

06 - Fresh California Avocado (1 1/2, thinly sliced)
07 - Cooked shredded chicken (1/2 cup)
08 - BBQ sauce (2 tbsp)

# Instructions:

01 - Spread 1 tablespoon of butter thinly on one side of each sourdough bread slice. Set aside the remaining 1 tablespoon of butter in a heavy-bottom skillet.
02 - In a small bowl, mix mayonnaise and chipotle adobo sauce. Spread the chipotle mayo evenly on the unbuttered sides of the bread.
03 - On one bread slice, sprinkle shredded Colby jack cheese evenly. Top with thinly sliced avocado.
04 - In a small bowl, mix shredded chicken with BBQ sauce until well combined. Spread the chicken mixture on the other bread slice.
05 - Heat the skillet on medium heat until butter is melted. Add the sandwich and cook for 3-4 minutes on each side until golden brown.
06 - Add 1 tbsp of water to the bottom of the pan and cover with a lid. The steam will help melt the cheese. Remove from pan and serve with a pickle or tomato soup.

02 - Can substitute with any cooked chicken or leftover chicken
