In a mixing bowl with a lid or a brown paper bag, combine cornmeal, flour, paprika, salt, lemon pepper, and cayenne pepper. Close and shake well to evenly blend all the seasonings.

Place cleaned fish fillets into the bowl or bag with the seasoned cornmeal mix. Shake until each piece is fully coated.

Heat canola or peanut oil to 375°F in a deep fryer or heavy-bottomed pan. Fry the fish fillets for 5-7 minutes until they turn golden brown and crispy.
