Cottage Cheese Bagels (Print Version)

# Ingredients:

01 - 1 cup self-rising flour (or see note for alternative)
02 - 1 cup full-fat cottage cheese
03 - 1 large egg, beaten (for egg wash)

04 - Sesame seeds
05 - Everything bagel seasoning
06 - Shredded asiago cheese
07 - Poppy seeds

# Instructions:

01 - Preheat oven to 375°F and move rack to the top position. Line a large baking sheet with parchment paper.
02 - Place cottage cheese in a food processor or blender. Blend until completely smooth, scraping the sides as needed.
03 - Transfer the blended cottage cheese to a bowl. Add flour and mix until combined. Knead dough on a floured surface 8-10 times until smooth. Add more flour as needed to prevent sticking.
04 - Divide dough into 4 equal parts (about 80g each). Roll each into a 6-7 inch rope and shape into a circle, pinching the seam to seal. Brush with egg wash and sprinkle with toppings.
05 - Bake in the preheated oven for 25-30 minutes or until puffed and golden. Let cool for 15 minutes before slicing and serving.
06 - Preheat air fryer to 350°F for 5 minutes. Spray basket with nonstick spray. Air fry for 12-14 minutes until golden and cooked through.

# Notes:

01 - If using gluten-free flour, mix 1 cup GF blend with 1 tsp baking powder and 1/2 tsp kosher salt.
02 - Cottage cheese consistency varies by brand; full-fat gives the best results.
03 - Dough may be sticky. Add flour gradually and knead well until manageable.
04 - These can be made with Greek yogurt instead of cottage cheese if preferred.
05 - Store in an airtight container at room temperature for up to 4 days.
