01 - 3 large eggs, separated
02 - ½ cup cottage cheese
03 - ¼ teaspoon cream of tartar
04 - ½ teaspoon baking powder
05 - ½ teaspoon salt

# Instructions:

01 - Set your oven to 300°F (150°C) and line a baking sheet with parchment paper.
02 - In a clean mixing bowl, beat the egg whites with the cream of tartar using an electric mixer until stiff peaks form.
03 - In a separate bowl, whisk together the egg yolks, cottage cheese, baking powder, and salt until smooth.
04 - Carefully fold the whipped egg whites into the cottage cheese mixture. Mix gently to keep the batter light and airy.
05 - Spoon dollops of the mixture onto the prepared baking sheet, shaping them into rounds.
06 - Bake for 25–30 minutes, or until the rounds are golden brown and firm to the touch.
07 - Let the cloud bread cool for a few minutes before serving. Enjoy warm or at room temperature.

# Notes:

01 - Fresh eggs at room temperature whip better and make fluffier bread.
02 - Stiff peaks are essential—don’t under-whip the egg whites!
03 - Fold with care to keep the air in the mixture for a light texture.
04 - Store in an airtight container at room temperature for 1 day, in the fridge for 3 days, or freeze for up to 1 month.
05 - Reheat in the oven or air fryer for a crispy finish, or microwave for a soft bite.
