County Fair Funnel Cakes (Print Version)

# Ingredients:

→ Batter

01 - 2 large eggs
02 - 1 cup milk
03 - 1 cup water
04 - 1 teaspoon vanilla extract
05 - 3 cups all-purpose flour
06 - 1/4 cup granulated sugar
07 - 3 teaspoons baking powder
08 - 1/4 teaspoon salt

→ For Frying and Serving

09 - Oil, for deep frying
10 - Powdered sugar, for dusting

# Instructions:

01 - In a deep fryer or heavy skillet, heat oil to 375°F. Use a thermometer for best results.
02 - In a large bowl, beat the eggs. Add milk, water, and vanilla. Mix well, then whisk in the flour, sugar, baking powder, and salt until smooth.
03 - Cover the bottom of a funnel with your finger, pour in about 1/2 cup of batter, then hold it several inches above the oil. Remove your finger and move the funnel in a circular motion to create a spiral pattern.
04 - Fry each funnel cake for 3–5 minutes per side until golden brown. Use tongs to flip and then transfer to paper towels to drain.
05 - Sprinkle warm funnel cakes with powdered sugar and serve immediately. Repeat with remaining batter.

# Notes:

01 - Use a thermometer to keep oil at a steady 375°F. Too hot and they burn, too cold and they absorb oil.
02 - You can use a squeeze bottle or piping bag as an alternative to a funnel.
