In a deep fryer or heavy skillet, heat oil to 375°F. Use a thermometer for best results.

In a large bowl, beat the eggs. Add milk, water, and vanilla. Mix well, then whisk in the flour, sugar, baking powder, and salt until smooth.

Cover the bottom of a funnel with your finger, pour in about 1/2 cup of batter, then hold it several inches above the oil. Remove your finger and move the funnel in a circular motion to create a spiral pattern.

Fry each funnel cake for 3–5 minutes per side until golden brown. Use tongs to flip and then transfer to paper towels to drain.

Sprinkle warm funnel cakes with powdered sugar and serve immediately. Repeat with remaining batter.
