Peel, core, and slice apples. Use an apple wedger to cut into slices, then cut wedges in half or thirds.

Melt butter and brown sugar in a very large skillet or saucepot over medium heat. Reduce heat to medium-low and add apples, tossing to coat evenly. Cover and cook for a few minutes.

Stir apples, bringing bottom ones to the top. After 5-10 minutes, sprinkle seasonings over apples and stir again. Simmer on medium-low or low heat for 20-30 minutes, stirring every 4-6 minutes.

When apples start to soften, mix water and cornstarch into a slurry. Add to the pan to thicken the sauce. Continue cooking until apples reach desired softness (about 40 minutes total).

If sauce becomes too thick, thin with apple juice or water. Mix well to reach desired consistency.

Alternatively, place apples and cornstarch in slow cooker. Whisk brown sugar and spices, pour over apples. Cut butter into cubes and sprinkle on top. Cook on high for 2 hours until fork-tender.
