Classic Spiced Apple Side Dish (Print Version)

# Ingredients:

→ Apples and Base

01 - Large apples (8, about 12 cups when cored and sliced)
02 - Butter (4 tablespoons)
03 - Brown sugar (1/4 cup)

→ Spices

04 - Cinnamon (1 tablespoon)
05 - Ground nutmeg (3/4 teaspoon)
06 - Ground allspice (1/2 teaspoon)
07 - Ground cardamom (1/2 teaspoon)
08 - Alternatively: Apple pie spice (1 1/2 tablespoons)

→ Thickener

09 - Cornstarch (2 tablespoons)
10 - Water (3 tablespoons)
11 - Apple juice or water (as needed)

# Instructions:

01 - Peel, core, and slice apples. Use an apple wedger to cut into slices, then cut wedges in half or thirds.
02 - Melt butter and brown sugar in a very large skillet or saucepot over medium heat. Reduce heat to medium-low and add apples, tossing to coat evenly. Cover and cook for a few minutes.
03 - Stir apples, bringing bottom ones to the top. After 5-10 minutes, sprinkle seasonings over apples and stir again. Simmer on medium-low or low heat for 20-30 minutes, stirring every 4-6 minutes.
04 - When apples start to soften, mix water and cornstarch into a slurry. Add to the pan to thicken the sauce. Continue cooking until apples reach desired softness (about 40 minutes total).
05 - If sauce becomes too thick, thin with apple juice or water. Mix well to reach desired consistency.
06 - Alternatively, place apples and cornstarch in slow cooker. Whisk brown sugar and spices, pour over apples. Cut butter into cubes and sprinkle on top. Cook on high for 2 hours until fork-tender.
