# Ingredients:

01 - Thick-cut bacon (1 pound, diced)

→ Aromatics

02 - Yellow onions (2 large, finely diced, about 3 cups)
03 - Shallots (2 large or 6 small, diced, about 1 1/2 cups)
04 - Garlic (2 teaspoons, minced)

→ Sweeteners and Liquids

05 - Light brown sugar (1/2 cup, packed)
06 - Apple cider vinegar (1/3 cup)
07 - Pure maple syrup (1/4 cup)

→ Seasonings and Fruit

08 - Chili powder (1 teaspoon, optional)
09 - Fresh cranberries (1 1/2 cups)

# Instructions:

01 - In a medium skillet over medium heat, cook diced bacon until crispy. Remove bacon to a plate, reserving about 4 tablespoons of bacon grease in the skillet.
02 - Reduce heat to medium-low. Add diced onions and shallots to the bacon grease. Cook for 15-20 minutes, stirring often, until caramelized.
03 - Mix in minced garlic, brown sugar, apple cider vinegar, maple syrup, chili powder, cranberries, and cooked bacon pieces.
04 - Simmer the mixture for 10-12 minutes, or until cranberries break down and the jam reaches a thick, spreadable consistency.
05 - Serve warm or cold. If refrigerated, slightly warm before serving for best texture.
