Preheat oven to 400°F. Line a baking sheet with parchment paper.

Spoon about 1 tablespoon of grated Parmesan onto the baking sheet and firmly flatten into a disc shape. Repeat with the remaining cheese, leaving about 2 inches between each mound (they will spread as they bake).

Bake for 5–7 minutes, or until golden and bubbling. Watch closely to prevent over-browning.

Let the crisps cool on the baking sheet for 2–3 minutes to firm up, then transfer to a wire rack to cool completely.
