Toast buns until golden. Cut beef into 4 pieces and gently roll into balls.

Heat cast iron pan until smoking hot. Add small amount of oil.

Place beef balls in pan, cover with parchment, smash thin. Season, cook 90 seconds, flip, add cheese, cook 90 seconds more.

Stack with burger sauce, lettuce, tomato, onion, patties, and pickles.

Layer with mayo, lettuce, tomato, patty, chutney, bacon, middle bun, more toppings, second patty, onion rings, and BBQ sauce.
