Start by getting all your ingredients ready and prepped so they’re within reach when you start making the dough.

In a large bowl, whisk together the flour, baking powder, and salt. Stir in the chives and parsley to evenly distribute the herbs.

Add the Greek yogurt to the bowl. Mix the olive oil and garlic together, then pour into the bowl along with the water. Stir everything together with a spatula or wooden spoon until you get a soft, moist dough.

Transfer the dough onto a lightly floured surface and divide it into 6 equal parts. Roll each into a round ball.

Press each dough ball into a rustic 6–7 inch round. Set them aside on a parchment-lined baking sheet as you go.

Heat a non-stick skillet over medium heat. Brush one side of a flatbread with olive oil, place it oil-side down in the skillet, and cook for 1½ minutes or until golden brown. Brush the top side with oil, flip, and cook the other side for another 1 to 1½ minutes. Repeat with remaining dough.

Once all the flatbreads are cooked, brush with a little more olive oil if desired and sprinkle extra chives or parsley on top. Serve warm or at room temperature.
