Creamy French Onion Potato Casserole (Print Version)

# Ingredients:

→ Caramelized Onions

01 - 3 tablespoons unsalted butter
02 - 3 large onions, sliced
03 - ½ teaspoon kosher salt
04 - 2 teaspoons Worcestershire sauce
05 - 3 cloves garlic, minced

→ Potatoes

06 - 3 pounds russet potatoes
07 - 8 ounces cream cheese
08 - 1 cup sour cream
09 - ¾ cup whole milk, warmed
10 - 1½ teaspoons kosher salt
11 - 1 teaspoon black pepper
12 - ¾ cup Parmesan cheese
13 - 2 cups shredded Monterey Jack cheese
14 - Chives for garnish

# Instructions:

01 - Cook sliced onions with butter and salt over medium-low heat until dark, 30-35 minutes. Add Worcestershire and garlic.
02 - Dice potatoes, boil until tender 20-30 minutes. Drain and mash.
03 - Combine potatoes with cream cheese, sour cream, milk, seasonings, onions, and half the cheese.
04 - Transfer to baking dish, top with remaining cheese. Bake covered 30 minutes at 350°F, then uncovered 20-30 minutes.
