Easy French Toast Muffins (Print Version)

# Ingredients:

→ Muffins

01 - 1 loaf sourdough bread (about 1 pound)
02 - 2 cups milk
03 - 6 eggs
04 - 2 tablespoons granulated sugar
05 - 1 teaspoon ground cinnamon
06 - ½ teaspoon salt
07 - 1 teaspoon vanilla extract

→ Topping

08 - ⅓ cup flour
09 - ¼ cup brown sugar
10 - ½ teaspoon cinnamon
11 - ¼ cup cold butter

# Instructions:

01 - Preheat the oven to 350°F. Grease a muffin pan with cooking spray. Set aside.
02 - Slice sourdough bread into ½ inch cubes. Place in a large bowl and set aside.
03 - In a medium mixing bowl, beat eggs well. Add milk, sugar, cinnamon, salt and vanilla. Mix well.
04 - Pour egg mixture over bread. Carefully mix to evenly coat all the bread cubes. Let sit for ten minutes to soak in.
05 - In a small bowl, combine the flour, brown sugar and cinnamon for the topping. Cut in butter until you have small crumbles.
06 - Scoop bread into muffin tin, then sprinkle topping on each one. Place in the oven and cook for 20-25 minutes. Allow to cool slightly and serve warm.

# Notes:

01 - Skip the topping for a less sugary breakfast option
02 - Serve with warm maple syrup, powdered sugar or berries
03 - Can be frozen without the topping for up to three months
