Slow Cooker Garlic Butter Beef (Print Version)

# Ingredients:

01 - 1½ pounds beef stew meat, cut into bite-sized chunks
02 - 1 pound baby potatoes, cut in half
03 - 1 tablespoon olive oil for searing

→ For the Garlic Butter Sauce

04 - 4 tablespoons unsalted butter, melted
05 - 3 cloves fresh garlic, finely minced
06 - 1 teaspoon onion powder
07 - 1 teaspoon smoked paprika
08 - ½ teaspoon dried thyme
09 - ½ teaspoon dried rosemary
10 - ½ teaspoon salt, plus more to taste
11 - ¼ teaspoon fresh ground black pepper
12 - ¼ cup beef broth

# Instructions:

01 - Get your skillet nice and hot over medium-high heat with the olive oil. Brown those beef chunks until they're golden on all sides - about 2-3 minutes each side. This step adds tons of flavor! Transfer the meat to your slow cooker.
02 - Toss those halved baby potatoes right into the slow cooker with your browned beef.
03 - Mix up your sauce in a bowl - combine the melted butter, minced garlic, onion powder, that smoky paprika, thyme, rosemary, salt, and pepper until it's all well blended. Pour this beautiful mixture all over your beef and potatoes.
04 - Pour in the beef broth - this will help create that rich sauce as everything cooks.
05 - Cover your slow cooker and let everything cook on low for 6-8 hours (or 3-4 hours on high) until those beef bites are super tender and your potatoes are perfectly cooked through.

01 - For an extra rich sauce, stir in a splash of heavy cream during the last 30 minutes
