Turkey Stuffed Peppers (Print Version)

# Ingredients:

→ Stuffed Peppers

01 - 6 medium bell peppers
02 - 3 tbsp olive oil (divided)
03 - 1/4 tsp sea salt
04 - 1/2 large red onion, diced (about 1 cup)
05 - 1 1/2 lb ground turkey
06 - 3 tbsp taco seasoning
07 - 3/4 cup water
08 - 1 (14.5 oz) can diced tomatoes, drained
09 - 2 cups shredded cheddar cheese

# Instructions:

01 - Preheat oven to 400°F (204°C). Cut tops off bell peppers, remove seeds and ribs, and slice a thin layer off bottoms to stabilize. Arrange in a baking dish, drizzle with 2 tbsp olive oil, and sprinkle with sea salt.
02 - Bake peppers for about 15 minutes until slightly softened and puckered. Blot any liquid inside with paper towels.
03 - In a pan, heat remaining 1 tbsp olive oil over medium. Add diced onions and sauté for 5–10 minutes until soft. Push onions to the side and cook ground turkey in the center for 8–10 minutes, breaking it up as it cooks.
04 - Add taco seasoning and water to the pan. Simmer for 3–4 minutes until liquid reduces. Stir in drained diced tomatoes.
05 - Reduce oven to 350°F (177°C). Fill peppers halfway with meat mixture, top with cheese, then finish with remaining filling and cheese. Bake for 10 minutes until cheese is melted.

01 - You can prepare the filling and peppers ahead of time for easy meal prep.
02 - Top with avocado, sour cream, or salsa for extra flavor.
03 - These freeze well before or after baking for up to 3 months.
