# Ingredients:

→ Main Ingredients

01 - 1½ to 2 cups ham, chopped
02 - 1 small white onion, chopped
03 - 1 red bell pepper, seeded and chopped
04 - 1 tablespoon vegetable oil
05 - 3 large eggs, lightly beaten
06 - 3 cups cooked rice
07 - 1 cup pineapple tidbits
08 - 1 tablespoon sesame oil
09 - 2–3 tablespoons soy sauce, to taste
10 - 2 tablespoons chopped green onions (optional)

# Instructions:

01 - Preheat a large skillet or wok over medium heat. Add the vegetable oil, then sauté the chopped ham, onion, and bell pepper until tender.
02 - Push the ham and vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble them until fully cooked. Then mix everything together.
03 - Stir in the cooked rice and pineapple tidbits. Mix well to combine with the ham, veggies, and eggs.
04 - Drizzle sesame oil and soy sauce over the mixture. Stir-fry until the rice is hot and everything is evenly coated. Add chopped green onions if desired and serve warm.

# Notes:

01 - Use day-old rice for best results—it fries better and prevents sogginess.
02 - Customize with peas, carrots, or even leftover chicken.
03 - Taste before adding more soy sauce—some hams are already salty.
