01 - 12 oz bow tie pasta
02 - 2 tablespoons olive oil
03 - 1 pound mild Italian sausage, casings removed
04 - 1/2 teaspoon red pepper flakes (optional)
05 - 1/2 cup diced onion
06 - 4 cloves garlic, minced
07 - 1 (28 oz) can Italian-style plum tomatoes, drained and coarsely chopped
08 - 1 1/2 cups heavy cream
09 - 1 cup packed spinach leaves, sliced thin
10 - Fresh parsley, minced (optional, for garnish)

# Instructions:

01 - Bring a large pot of water to a boil. Cook the bow tie pasta according to package directions. Drain and set aside.
02 - In a large skillet, heat olive oil over medium-high heat. Add the Italian sausage and optional red pepper flakes, breaking up the meat as it cooks. When the sausage is browned, stir in the onion and garlic. Cook until the onion is soft and translucent.
03 - Add the chopped tomatoes and heavy cream to the sausage mixture. Stir well and let it simmer for about 10 minutes until the sauce thickens.
04 - Stir in the sliced spinach and cook for an additional 2–3 minutes until wilted. Add the cooked pasta and toss to coat evenly in the sauce.
05 - Sprinkle with fresh minced parsley if desired. Serve warm.
