Quick Middle Eastern Flatbread Delight (Print Version)

# Ingredients:

→ Base

01 - Lebanese bread (1 x ~30cm/12" flatbread)

→ Chicken Mince Spread

02 - Chicken mince (125g / 4 oz)
03 - Tomato paste (2 teaspoons)
04 - Baharat spice mix (1 teaspoon)
05 - Sweet paprika (1/2 teaspoon)
06 - Garlic clove (1, crushed)
07 - Cooking salt (1/4 teaspoon)
08 - Parsley or coriander, finely chopped (1 tablespoon, optional)
09 - Extra virgin olive oil (1 1/2 tablespoons)

→ Essential Toppings

10 - Extra virgin olive oil
11 - Danish feta or goat cheese (2 tablespoons, crumbled)

→ Optional Toppings

12 - Lemon juice
13 - Dried chili flakes
14 - Toasted pine nuts (about 1 tablespoon, roughly chopped)
15 - Parsley or coriander, finely chopped (1 teaspoon)

# Instructions:

01 - If needed, use scissors to trim the Lebanese bread so it fits in the pan, cutting only one side to prevent separation.
02 - Mix chicken mince, tomato paste, Baharat spice, paprika, garlic, salt, and chopped herbs in a bowl. Spread evenly across one side of the bread like a thin layer of peanut butter.
03 - Heat 1 tablespoon of oil in a large non-stick pan over high heat. Place bread meat-side down and cook for 90 seconds, pressing lightly to encourage coloration.
04 - Turn the bread with tongs and cook the other side for 90 seconds until golden and crispy. Lower heat if browning too quickly.
05 - Slide onto a cutting board. Sprinkle with crumbled feta, drizzle with extra virgin olive oil, and add optional toppings as desired. Cut into 8 slices and serve.

# Notes:

01 - Can substitute Lebanese bread with other thin flatbreads or tortillas
02 - Lamb mince is more traditional, but any ground meat works
03 - Can make homemade Baharat spice mix if unavailable
