Authentic Louisiana Dirty Rice (Print Version)

# Ingredients:

→ Meats

01 - 1 pound ground beef
02 - 1 pound ground pork sausage
03 - 1 tablespoon bacon grease or cooking oil

→ Vegetables & Rice

04 - 4-5 cups cooked rice, prepared with chicken broth
05 - ¾ cup green bell pepper, diced
06 - ¾ cup yellow onion, diced
07 - ¼ cup celery, diced

→ Liquids & Thickener

08 - 2 cups chicken broth
09 - ¼ cup flour

→ Herbs & Spices

10 - 3 bay leaves
11 - 2 tablespoons fresh parsley, chopped
12 - 1 tablespoon dried oregano
13 - 2 teaspoons dried thyme
14 - 2 teaspoons minced garlic
15 - 1½ teaspoons salt
16 - 1 teaspoon chili powder
17 - ½ teaspoon ground black pepper
18 - ¼ teaspoon cayenne pepper

# Instructions:

01 - In a large skillet, heat bacon grease or cooking oil. Add ground beef and sausage and brown.
02 - As meat begins to brown, add diced bell pepper, onion and celery.
03 - When meat is fully browned, stir in herbs and spices except for parsley. Mix well. Add flour and mix well again, making sure the flour coats the meat.
04 - Add broth and bay leaves. Scrape the bottom of the pan to loosen any browned bits. Allow to simmer 5-8 minutes.
05 - Fold in rice and parsley. Simmer for 5 more minutes. Serve.

# Notes:

01 - Traditional version uses chicken livers; this recipe uses bacon grease for rich flavor
02 - Can be used as stuffing for poultry
03 - Some variations add mushrooms or oysters
