# Ingredients:

→ Base & Batter

01 - 1/2 cup (1 stick) unsalted butter
02 - 1 cup all-purpose flour
03 - 1 1/2 teaspoons baking powder
04 - 1/4 teaspoon salt
05 - 1 cup granulated sugar
06 - 1 cup buttermilk or whole milk
07 - 1 teaspoon vanilla extract
08 - 1 teaspoon lemon extract (optional)

→ Lemon Filling

09 - 1 can (21 oz) lemon pie filling or lemon curd

# Instructions:

01 - Preheat oven to 350°F. Place the butter in a 9x9-inch baking dish and melt in the oven for 3-4 minutes. Remove once fully melted.
02 - In a mixing bowl, whisk together flour, baking powder, salt, and sugar. Gradually mix in buttermilk, vanilla extract, and lemon extract (if using) until smooth.
03 - Pour the batter evenly over the melted butter in the baking dish—do not stir. Spoon the lemon pie filling or lemon curd over the batter, distributing it evenly.
04 - Place the dish in the oven and bake for 45-55 minutes, or until golden brown and puffed around the edges.
05 - Remove from oven and let cool slightly. The cobbler will have a soft lemon pudding layer at the bottom. Serve warm with whipped cream, ice cream, or a dusting of powdered sugar.

01 - For extra tartness, use lemon curd instead of pie filling.
02 - The batter will rise above the lemon filling as it bakes, creating a layered effect.
