Meatloaf Cupcakes with Potato Frosting (Print Version)

# Ingredients:

→ For the Meatloaf

01 - 1 pound ground beef
02 - 1 onion, grated (brown, white or yellow)
03 - 2 small carrots, grated
04 - 2 eggs
05 - ¼ cup grated Parmesan cheese
06 - ¼ cup tomato ketchup
07 - 1 cup panko breadcrumbs
08 - 1 teaspoon garlic powder
09 - 1 teaspoon dried oregano
10 - 1 teaspoon dried thyme
11 - 1 teaspoon salt
12 - Black pepper to taste

→ For the Mashed Potatoes

13 - 2 large or 3 medium potatoes
14 - 1 tablespoon butter (optional)
15 - ½ - 1 cup milk

→ For Garnish

16 - Tomato ketchup for topping
17 - Fresh parsley, finely chopped (optional)

# Instructions:

01 - Heat oven to 350°F (180°C). Spray 8 muffin tin holes with cooking spray.
02 - Grate onion and carrots into a large bowl. Add remaining meatloaf ingredients and mix well with your hands.
03 - Fill muffin tins with ½ cup portions of meat mixture, shaping tops into slight domes. Bake 20-25 minutes until browned.
04 - Cook diced potatoes until tender. Drain and mash with butter and milk until smooth but still stiff enough to hold shape.
05 - Top each meatloaf with ketchup and pipe or spoon on mashed potatoes. Garnish with parsley if desired.
