02 - Onion (1/2 medium, diced, about 1 cup)
03 - Frozen corn (1 cup, thawed)
04 - Jalapeno pepper (1, diced)
05 - Garlic clove (1, minced)

→ Seasonings

06 - Taco sauce (2 tablespoons)
07 - Chili powder (2 teaspoons)
08 - Cumin (1 teaspoon)
09 - Smoked paprika (1 teaspoon)
10 - Lime juice (2 tablespoons, about 1/2 lime)
11 - Salt (to taste)
12 - Black pepper (to taste)

13 - Cooked rice (2 1/2 cups)

# Instructions:

01 - Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2-3 minutes until softened.
02 - Add corn, jalapeno, garlic, taco sauce, lime juice, chili powder, paprika, and cumin. Stir well to combine all ingredients.
03 - Increase heat to medium-high. Stir in the cooked rice and cook, stirring frequently, for 4-5 minutes.
04 - Remove from heat. Season with salt and pepper to taste. Garnish with sliced green onions.
