Preheat oven to 375°F.

Thaw frozen vegetables completely (can defrost in microwave if desired).

In a medium bowl, mix cream of chicken soup and sour cream. Stir in poultry seasoning and pepper. Mix in chicken and vegetables.

Lightly flour work surface. Unroll crescent dough and pinch together diagonal lines. Cut into 8 squares.

Spray 8 regular-size muffin cups with nonstick cooking spray. Place a crescent square into each muffin cup, pressing so corners extend above the top. Spoon about 1/4 cup chicken mixture into each lined cup.

Bake for 18-20 minutes until crescents are deep golden brown. Let cool for 5 minutes before removing from muffin tin.

For a cheesy touch, sprinkle shredded cheddar cheese over the top and return to oven for 1-2 minutes to melt.
