Cook sausage links in a large frying pan. Remove and place on a plate lined with paper towels to drain.

Cut sausage links into 3 pieces. Set aside.

In a medium bowl, whisk together flour, sugar, baking soda, salt, and baking powder. Set aside.

In a small bowl, whisk egg and buttermilk together until combined.

Pour wet ingredients into dry ingredients and stir gently. Batter will be lumpy.

In a large saucepan, heat oil over medium-high heat.

Dip each piece of sausage into the pancake batter. Add a few pieces at a time to the hot oil. Deep fry until golden brown on all sides.

Remove fried sausage bites with a slotted spoon and place on a paper towel-lined plate. Serve hot, dusted with powdered sugar and drizzled with maple syrup.
