Easy No-Bake Strawberry Crunch Cheesecake (Print Version)

# Ingredients:

→ Crust

01 - 24 Golden Oreo cookies
02 - 4 tablespoons salted butter, melted

→ Filling

03 - 24 ounces (3 packages) cream cheese, room temperature
04 - 2 cups powdered sugar
05 - 2 teaspoons lemon juice
06 - 1 cup fresh strawberries, puréed
07 - 2 teaspoons vanilla extract
08 - 1½ cups heavy whipping cream
09 - 1 batch strawberry shortcake crumble

# Instructions:

01 - Crush Golden Oreos in a food processor or in a ziploc bag with a rolling pin. Add melted butter and combine until well saturated.
02 - Spray a 9-inch springform pan with cooking spray, then press in crust mixture evenly around the bottom and one inch up the sides of the pan. Place in freezer while preparing the filling.
03 - Combine softened cream cheese, vanilla, lemon juice, and powdered sugar and mix with an electric mixer until smooth.
04 - In a separate bowl, beat whipped cream with the whisk attachment until stiff peaks form. Gently fold whipped cream into cream cheese mixture, taking care not to deflate.
05 - Divide mixture in two. Add puréed strawberries to one half and fold gently. Pour strawberry mixture into crust, smooth top. Layer remaining plain cheesecake mixture and smooth.
06 - Cover cheesecake with plastic wrap and freeze 4-5 hours or overnight. Remove from pan, coat with strawberry crumb topping. Return to freezer until serving.

# Notes:

01 - Allow to thaw 10-15 minutes before serving for easier slicing
02 - Can be made into cones, jars, or cheesecake bites
