Aussie Party Pies (Print Version)

# Ingredients:

→ Beef Filling

01 - 3 tablespoons olive oil
02 - 3 lb (1.5 kg) chuck steak, cut into small 1cm cubes
03 - 2 onions, diced (brown, yellow, or white)
04 - 3 garlic cloves, minced
05 - 2 tablespoons tomato paste
06 - 4 cups (1 litre) beef stock or broth
07 - 1 cup red wine (dry and dark)
08 - 2 dried bay leaves (or 3 fresh)
09 - 1 1/2 teaspoons salt (plus more to taste)
10 - 2 teaspoons black pepper
11 - 3 tablespoons cornstarch (cornflour)
12 - 4 tablespoons water

→ Pastry

13 - 4 sheets frozen shortcrust pastry (10x10 inches), thawed
14 - 3–4 sheets frozen puff pastry (10x10 inches), thawed
15 - 1 egg yolk or whole egg, lightly beaten (for egg wash)

→ To Serve

16 - Tomato sauce or tomato ketchup

# Instructions:

01 - Heat 1 tbsp of oil in a large heavy pot. Sear half of the beef until browned, then transfer to a bowl. Repeat with remaining beef.
02 - Lower heat to medium-high, add remaining oil, and sauté onions and garlic until soft and translucent, about 5 minutes.
03 - Return beef to the pot. Add tomato paste, stock, wine, bay leaves, salt, and pepper. Stir and bring to a gentle simmer. Cover and cook for 50–60 minutes, stirring occasionally, until beef is tender. Add water if liquid reduces too quickly.
04 - Mix cornstarch with water, pour into the pot, and stir for 5 more minutes until thickened. Remove from heat and let cool—filling will thicken as it cools.
05 - Preheat oven to 350°F (180°C). Spray 16 muffin or pie tins (about 3.2-inch diameter) with nonstick spray.
06 - Cut shortcrust pastry into 4-inch rounds and press into tins. Fill each shell to the top with beef mixture. Cut puff pastry into 3.2-inch rounds and place over filling. Press edges to seal and cut small slits in the top.
07 - Brush tops with egg wash and bake for 20–25 minutes until deep golden brown. Let rest for a few minutes before serving.

# Notes:

01 - You can freeze the pies after baking. Reheat straight from frozen or thaw first.
02 - Use a tomato can as a cutter—it’s the perfect size for the pastry base!
03 - These pies are great for parties, picnics, or as make-ahead meals.
