Crispy Popeyes-Style Fried Chicken (Print Version)

# Ingredients:

→ Dry Coating Mixture

01 - 2 cups all purpose flour
02 - 2 tablespoons baking powder
03 - 1 teaspoon chili powder
04 - 1 packet of Sazon (or 2 teaspoons)
05 - 1 teaspoon salt
06 - 1 teaspoon garlic powder
07 - 1 teaspoon pepper
08 - 1 teaspoon onion powder
09 - ½ teaspoon cayenne pepper

→ Chicken Seasoning

10 - 8 pieces chicken
11 - 1 teaspoon salt
12 - 2 teaspoons paprika

→ Wet Batter

13 - 4 eggs
14 - ¼ cup cold water
15 - 1 tablespoon hot sauce

→ For Frying

16 - 6-8 cups vegetable oil

# Instructions:

01 - Preheat your oil to 350° degrees.
02 - In a large bowl, mix flour, baking powder and spices.
03 - In a separate bowl, beat together eggs, cold water, and hot sauce using a whisk.
04 - In a separate bowl, season the chicken with the salt and paprika.
05 - First, coat the chicken in flour mixture, shaking off any excess. Then, dip it in egg batter and coat again in flour, shaking off any excess.
06 - For best results, let your chicken rest while it is fully coated for 15 minutes before frying. This will ensure that the coating sticks well and results in a crispy fried chicken.
07 - Deep fry your chicken in 350°F oil for 8-10 minutes until it reaches an internal temperature of 165°F.

# Notes:

01 - Use a thermometer to make sure oil temperature stays at 350°F
02 - Don't overcrowd the frying pan - fry in batches if needed
