Tater Tot Shepherd's Pie Casserole (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil
02 - 1 onion, finely diced
03 - 3 garlic cloves, minced
04 - 1 pound ground beef
05 - 2 tablespoons tomato paste
06 - 2 tablespoons all-purpose flour
07 - 2 cups beef broth
08 - 2 cups frozen mixed vegetables (peas, carrots, corn)
09 - 1 tablespoon Worcestershire sauce
10 - 1 teaspoon dried thyme
11 - Salt and pepper to taste

→ Topping

12 - 2 pound bag frozen tater tots
13 - 1½ cups shredded cheddar cheese
14 - ¼ cup finely chopped fresh parsley (optional, for garnish)

# Instructions:

01 - Preheat oven to 350°F.
02 - Heat olive oil over medium-high heat. Cook diced onion for 3 minutes until softened. Add minced garlic and cook 1 minute until fragrant.
03 - Add ground beef, cook and crumble until no longer pink. Add tomato paste and flour, cook 1 minute. Gradually stir in beef broth until well combined.
04 - Add frozen vegetables, Worcestershire sauce, and thyme. Cook until vegetables are heated through. Season with salt and pepper to taste. Remove from heat.
05 - Transfer mixture to 9x13-inch baking dish. Arrange frozen tater tots in single layer on top. Sprinkle with shredded cheese.
06 - Bake uncovered for 30 minutes on middle rack until tater tots are cooked through and golden. Garnish with parsley if desired before serving.

01 - Can use low or no sodium beef broth if needed
02 - Tater tots don't need to be thawed before use
