No-Bake Strawberry White Chocolate Cheesecake (Print Version)

# Ingredients:

→ Base

01 - 300g Digestive biscuits
02 - 150g unsalted butter, melted

→ Filling

03 - 200g white chocolate, chopped
04 - 680g full-fat soft cheese
05 - 50g icing sugar
06 - 200ml double/heavy cream
07 - 1 large vanilla pod, seeds only
08 - 200g fresh strawberries

→ Strawberry Sauce

09 - 200g strawberries, halved
10 - 50g sugar
11 - 1 teaspoon cornflour

# Instructions:

01 - Mix crushed biscuits with melted butter. Press into lined springform tin. Chill.
02 - Melt white chocolate, pour half over base. Chill again.
03 - Whip soft cheese until fluffy. Add sugar and remaining chocolate. Fold in vanilla cream and strawberries.
04 - Cook strawberries with sugar until soft. Strain, thicken with cornflour.
05 - Pour filling over base. Chill 4 hours or overnight. Top with sauce and fresh strawberries.
