Texas Roadhouse Smothered Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 2 large chicken breasts
02 - 1 teaspoon seasoned salt (like Lawry's)
03 - 1/2 teaspoon ground black pepper

→ Toppings

04 - 1 tablespoon butter, plus extra if needed
05 - 1 medium onion, cut into 1/4-inch slices
06 - 1/2 pound button mushrooms, sliced
07 - 1/4 pound Monterey Jack cheese, shredded
08 - Salt to taste

# Instructions:

01 - Cut chicken breasts in half horizontally. Place each half between plastic wrap and gently pound with a meat mallet until uniform thickness. Season with seasoned salt and ground black pepper.
02 - Melt butter in large skillet over medium-low heat. Add onions with a pinch of salt, sauté 3-4 minutes. Add mushrooms and sauté another 3-4 minutes until browned. Remove from skillet.
03 - If skillet is dry, add a teaspoon of butter. Cook chicken breasts 6-8 minutes on first side and 3-4 minutes on second side. Work in batches if needed to avoid overcrowding.
04 - Top chicken with sautéed onions, mushrooms, and Monterey Jack cheese. Turn off heat when cheese melts and serve.
