# Ingredients:

01 - 8 cups mixed greens (such as a spring mix)
02 - 2 medium ripe avocados, diced into 1-inch cubes
03 - 1 cup cherry tomatoes, halved
04 - 1 medium cucumber, halved lengthwise and thinly sliced into half-moons
05 - 6 oz smoked salmon, thinly sliced
06 - 1/3 cup crumbled feta cheese

→ Dijon Honey Vinaigrette

07 - 1/4 cup lemon juice
08 - 2 tablespoons honey
09 - 1 tablespoon Dijon mustard
10 - 1/4 cup olive oil
11 - 2 tablespoons minced fresh dill
12 - Salt and pepper to taste

→ Optional Garnish

13 - Pomegranate seeds
14 - Additional fresh dill

# Instructions:

01 - In a large salad bowl, combine mixed greens, diced avocado, cherry tomatoes, cucumber slices, smoked salmon, and crumbled feta. Set aside while preparing the dressing.
02 - In a medium bowl, whisk together lemon juice, honey, and Dijon mustard until smooth. Slowly drizzle in olive oil while whisking continuously until emulsified. Stir in fresh dill, then season with salt and pepper to taste.
03 - Just before serving, drizzle the dressing over the salad and toss gently to evenly coat all ingredients.
04 - Top with pomegranate seeds and additional fresh dill if desired. Serve immediately and enjoy!
