Cheesy Chicken Fritters (Print Version)

01 - 1 1/2 lbs chicken breasts, diced into 1/3-inch pieces
02 - 2 large eggs
03 - 1/3 cup mayonnaise (or Greek yogurt)
04 - 1/3 cup all-purpose flour (or cornstarch/potato starch for gluten-free)
05 - 4 oz mozzarella cheese, shredded
06 - 1 1/2 tablespoons fresh dill, chopped
07 - 1/2 teaspoon salt
08 - 1/8 teaspoon black pepper
09 - 2 tablespoons olive oil (or high-heat cooking oil like avocado oil)

10 - 1/3 cup mayonnaise
11 - 1 garlic clove, pressed
12 - 1/2 tablespoon lemon juice
13 - 1/4 teaspoon salt
14 - 1/8 teaspoon black pepper

# Instructions:

01 - Dice the chicken breasts into 1/3-inch pieces. Partially freeze for 20-30 minutes to make slicing easier.
02 - Whisk eggs and mayo. Add chicken, flour, cheese, dill, salt, and pepper. Mix gently to combine.
03 - Cover and refrigerate for at least 2 hours, or ideally overnight.
04 - Heat oil in a skillet. Scoop heaping tablespoons of mixture into hot oil, flatten slightly, and fry 3–4 minutes per side until golden and cooked through (165°F).
05 - Combine mayonnaise, garlic, lemon juice, salt, and pepper in a small bowl. Stir until smooth.
06 - Serve hot with garlic aioli on the side. Garnish with extra dill if desired.
