In a skillet over medium heat, brown the ground beef, breaking it up as it cooks. Drain excess grease, then stir in minced garlic and cook for another minute or two. Remove from heat and let it cool slightly.

Flatten each biscuit into a 4-inch round. Place a spoonful of beef mixture in the center, add a cube of cheddar and a bit of Parmesan, then fold and pinch the dough to seal. Gently roll into a ball.

Preheat oven to 375°F (190°C). Line a baking sheet with parchment. Place bombs seam-side down and brush the tops with melted butter. Sprinkle parsley on top if using.

Bake for 15–18 minutes, or until golden brown and puffed. Let cool slightly before serving.
