01 - 1 cup (256g) whole milk small curd cottage cheese (4% milkfat)

# Instructions:

01 - Set your oven to 350°F (177°C) and line a large cookie sheet with high-quality parchment paper to prevent sticking.
02 - Using a 1-tablespoon cookie scoop, place portions of cottage cheese onto the prepared baking sheet, spacing them 2 inches apart. Use the back of a spoon to flatten them to about 3/16 to 1/4 inch thickness. If adding seasoning, sprinkle it on now.
03 - Bake for 40-50 minutes, or until the edges turn dark brown and the surface is golden. Start checking around 20 minutes, as baking time varies depending on thickness.
04 - Once baked, remove from the oven and let them cool completely for 20-30 minutes. They will firm up as they cool.
05 - Eat immediately or store in an airtight container for a few hours. If refrigerated, reheat briefly to restore crispiness.
