Set your oven to 350°F (177°C) and line a large cookie sheet with high-quality parchment paper to prevent sticking.

Using a 1-tablespoon cookie scoop, place portions of cottage cheese onto the prepared baking sheet, spacing them 2 inches apart. Use the back of a spoon to flatten them to about 3/16 to 1/4 inch thickness. If adding seasoning, sprinkle it on now.

Bake for 40-50 minutes, or until the edges turn dark brown and the surface is golden. Start checking around 20 minutes, as baking time varies depending on thickness.

Once baked, remove from the oven and let them cool completely for 20-30 minutes. They will firm up as they cool.
