Million Dollar Chicken (Print Version)

# Ingredients:

→ Filling

01 - 1 (10.5 oz) can cream of chicken soup
02 - 2 oz cream cheese, softened
03 - 3/4 cup cottage cheese
04 - 1/2 cup sour cream
05 - 1 tsp onion powder
06 - 1 tsp garlic powder
07 - 3 medium scallions, thinly sliced (about 1/2 cup), whites and light green parts only
08 - 4 1/2 cups cooked shredded chicken (from 1 large rotisserie chicken)
09 - 2 tbsp finely chopped fresh parsley

→ Topping

10 - 30 buttery round crackers (about 1 1/2 cups), coarsely crushed
11 - 1/2 cup (4 oz) unsalted butter, melted
12 - 1 tsp chopped fresh thyme

→ For Serving

13 - Hot cooked white rice

# Instructions:

01 - Set oven to 350°F and allow it to preheat while you prepare the filling.
02 - In a large bowl, combine the cream of chicken soup, cream cheese, cottage cheese, sour cream, onion powder, and garlic powder. Stir until smooth and well blended.
03 - Fold in the sliced white and light green scallions, shredded chicken, and parsley. Mix until everything is evenly coated.
04 - In a separate bowl, mix crushed crackers with melted butter and thyme until all pieces are coated.
05 - Transfer the chicken mixture to an ungreased 11x7-inch baking dish. Spread it out evenly, then sprinkle the cracker topping over the surface.
06 - Place dish in the preheated oven and bake for about 30 minutes or until the edges are bubbly and the top is golden.
