In a mixing bowl, combine the mashed potatoes and cornstarch. Mix until you get a firm, pliable dough that’s not too sticky or too dry.

Use your hands to roll the mixture into small balls, just a bit smaller than a golf ball. Make sure they're all roughly the same size so they cook evenly.

Preheat your air fryer to 450°F. Place the potato balls in the basket, leaving space between each. Spray them generously with cooking spray and cook for 15–20 minutes, or until golden and crisp on the outside.
